A take on ciderkin, Little Pomona’s Ghost Perry is their way of upcycling what would generally be considered waste. Pomace (what's left after pressing out the juice from cider/perry fruit) was combined with water and pressed again. The juice was then poured into barrels containing fermented damson and apple lees. Prior to being bottled as a pet nat, the juice was allowed to ferment spontaneously. Pale pink in colour, plum and pear combine to provide an elegant and delicate summer thirst quencher. Before opening, be sure to store this upright as it contains naturally occurring sediment.
