However, Tokaj can make some fantastic dry wines, as proved by this Tokaji 2020 by Attila Homonna. The grapes for this traditional mix of Furmint and Harslevelu come from various plots of old vines (40-80 years old). The grapes are destemmed and crushed in a basket press, allowing the fruit to shine through. Until bottling, the wine is matured on the lees in old barrels. Furmint adds a high level of acidity to this wine, and the Harslevelu adds a velvety texture as well as honey and floral notes. The volcanic soils on which the grapes were grown contribute to the wine's wonderful minerality. An electric wine, with racy acidity and a touch of extremely well integrated VA this is unlike any Furmint we’ve ever had before.

Young and talented winemaker Bence Szilágyi is headquartered in Barnag, a sleepy town next to Lake Balaton, the biggest lake in Central Europe. Bence may have studied winemaking in Germany and Hungary, but Grand Vin de Barnag was only ever intended to be a side project for him. Bence produced the inaugural vintage of Grand Vin de Barnag, a play on the name of the more renowned Grand Vin de Bordeaux from France, in 2017. Bence grows 50% of the fruit he uses in his wines himself using rented vines, and he purchases the remaining 50% from a negociant farmer, whom he considers to be extremely lucky to work with. Bence creates his wines in a cellar that is carved into the limestone bedrock and is located beneath his home. As a result, fermentations go very slowly and typically only finish in the following spring. For Bence, this is a crucial aspect since, in his opinion, it is essential to the growth of structure and aromatics. He always ferments and ages his wines in old oak barrels (he employs a blend of French, Austrian, and Hungarian oak), and the 2020 vintage was the first one without sulphur additions. The winemaking mirrors the Furmint: 50% of the grapes were macerated in layers of whole clusters, whilst the other 50% were machine destemmed and pressed directly in a basket press with no maceration, then fermented in Clayver amphoras and Apollo Flextank egg fermenters. Still deeply textured like its sibling, but with the acidity softened a bit and the savoury, herbaceous notes turned up in equal measure. Réka came out swinging for the fences with her previous Disorder and hasn't slowed down – this shows Hárslevelű's distinctive personality whilst maintaining that same intensity and volcanic character. All the fruit grows in volcanic soils – rhyolite, andesite, dacite, and volcanic tuff, rocks that were once literally liquid fire. The Furmint was destemmed and spent two weeks on the skins with basket pressing and punch downs, whilst her own fruit was picked together as a field blend and co-fermented in egg-shaped fermenters – a mixture of whole cluster and destemmed, spending 4-5 days on skins before basket pressing to finish in fibreglass. The two parts were blended in August 2022. What emerges is full of life – ripe apples, damp earth, smoky tar, and mint opening up to hibiscus, orange blossom, apricot, and floral honey. The acidity plays its own note, quietly at first, then building, with yuzu, lime, chilli, sandalwood, and black tea providing depth and resonance. Working on volcanic soils midway between Eger and Tokaj, she embraces regional grapes but puts her own unique spin on things. This wine is split 50/50 between two approaches: half gets a gentle crushing with bunches layered like a sandwich in 1000-litre harvest vats, covered and untouched for 10-12 days for simple carbonic maceration with naturally produced CO2, then pressed in a traditional basket press. The other half is destemmed and direct-pressed with no maceration. The result is a medium-bodied red with an ideal balance of initial juiciness and meditative earthy texture. The juice ferments and ages in clay amphoras for 10 months on fine lees before bottling unfined, unfiltered, without SO₂.
