The fruit is sourced from high altitude vines planted over 30 years ago by his grandfather, sitting between 500 and 600 metres on a mountain pass. This unique site is defined by limestone soils, a cool northeast exposure, and refreshing sea breezes that allow the variety to act as a mirror for its terroir. In the cellar, the grapes receive a one-night maceration followed by fermentation and ageing in large 2,500 litre chestnut barrels with periodic lees stirring.
