This organic Chardonnay showcases the distinctive character of the prime south-facing Les Trouillots vineyard, where 42-year-old vines planted in 1980 thrive in a unique terroir of grey marl and limestone scree. Valentin Morel crafts this exemplary Jura Chardonnay in typical Jurassic style, moving away from overly buttery and vanilla flavours to centre on the mineral and savoury notes that define the variety at its purest. Hand-harvested grapes are direct pressed and fermented with native yeasts before ageing for 12 months in neutral oak barrels, then bottled without sulphur or other additions. The result is a wine of stunning finesse and precision, where the terroir's acidic backbone creates elegance and a wine that begs for the next sip. This is Chardonnay in its most authentic form, demonstrating extraordinary finesse while letting the vineyard's voice shine through with remarkable clarity and mineral-driven sophistication.
