Birdscape is prepared using what Christian refers to as "Pink Maceration"; a light extraction with only a small amount of skin contact, resulting in a dark rosé, or perhaps a very light red wine. The grapes (Blaufrankisch, Pinot Noir, and a few white varietals) are all harvested by hand and crushed by foot. Birdscape is bottled without the use of filtration, fining, or additional sulphur. Intense red fruits, herbs, and wet stone drive the wine, but a crisp acidity keeps everyone wanting more. Serve lightly chilled to allow the wine's subtleties to bloom.
