Sylvain Dittiere's grapes are all certified organic, and he takes a minimalist approach to winemaking and ageing; utilising light oak and minimal sulphur. La Perlee is made entirely of Chenin Blanc from two historic vine plots (aged 60 and 90 years), with the plots harvested and vinified separately. This wine is fruity and floral, with a complex saline finish. La Perlee is already drinking well, but it can also stand up to a few years of cellaring.
