After successfully making a Pinot Noir Pet Nat in 2016, Franz set to work making another batch in 2017. However, he was met with significantly less success: the juice just didn't want to ferment. Unperturbed, Franz left it as a light, sweet rose in a Champagne bottle. After 36 months in the bottle, the sugars have fermented, leaving behind a slightly bubbly, fruity and funky wine. Make sure to chill before opening.
