100% Gamay. Ygueule, a mediaeval French term meaning something like to "gullet," is the wine that is the most playful at the Bonnet-Cotton estate. They intend for this wine to be quickly and youngly consumed! Whole clusters were fully carbonically macerated in cement tanks, and were then matured there for around eight months. Unfiltered, unfined, with a hint of SO2.
