This Blanc de Blancs is one of Sicily's most refined traditional-method sparkling wines, crafted entirely from 100% Catarratto. The grapes are grown on the limestone-rich soils of the Fastuchera district near Alcamo, which imparts a distinct mineral backbone to the fruit. Following Alessandro’s minimal-intervention philosophy, the wine undergoes its primary fermentation with indigenous yeasts before a second fermentation in the bottle. It is aged on its lees for at least 20 months before being disgorged as a Pas Dosé, meaning no sugar is added in the final dosage, allowing the pure terroir and the character of the native Catarratto to shine through.
The wine displays a pale golden colour with persistent, fine bubbles and a complex, savoury nose. You’ll find aromas of sage and rosemary blended with crisp pear, apple, and a briny hint of sea air. On the palate, it is remarkably fresh and energetic, showing citrus and honeyed touches balanced by a signature bitter almond note and a sharp, saline minerality. The mousse is lively and persistent, making it an excellent choice for special occasions. It is a natural partner for shellfish, lobster, or a classic linguine alle vongole.
