Note di Bianco is the flagship wine from Alessandro Viola’s seven-hectare estate near Alcamo in northwestern Sicily. Made from 100% Grillo, the grapes are grown on clay soils at an elevation of about 250 metres, where they benefit from cooling Mediterranean breezes. Alessandro values Grillo for its resilience and its ability to consistently deliver quality even in dry conditions. Following his non-interventionist philosophy, the wine undergoes spontaneous fermentation with native yeasts in stainless steel and rests on its lees for several months. It is bottled unfiltered and unfined to keep the pure expression of the Sicilian terroir intact.
The wine is a pale straw colour with golden highlights and offers a bright nose of ripe pear, citrus zest, and Mediterranean herbs like thyme. On the palate, it is fresh and joyful, showing a lovely stony minerality alongside flavours of lemon and stone fruit. You will also notice a touch of pear skin bitterness that adds a nice layer of complexity, leading into a crisp, salty finish. It is an incredibly easy-drinking white that works perfectly as an aperitif or paired with seafood, light salads, and classic Sicilian dishes like caponata.
