Sinfonia di Bianco is a deep and complex expression of Grillo, sourced from Alessandro Viola’s most premium vineyard plots in Santa Ninfa and Pietrarenosa. To achieve the wine's characteristic depth, the grapes are harvested slightly over-ripe and undergo a three-day skin maceration. This process adds a light tannic structure and a rich texture that sets it apart from more conventional whites. Following Alessandro’s natural philosophy, the wine is aged in old chestnut barrels (botti) and bottled without fining or filtration, ensuring the pure character of the Sicilian hinterland is preserved.

The result is a textural and aromatic wine that is both intense and refreshing. It leads with a vibrant lime energy and scents of dried stone fruit and orange peel. On the palate, you will find layers of salty lemon and wet stone minerality, balanced by a slightly nutty undertone and a pleasant hint of bitterness. This complexity makes it an exceptionally food-friendly wine, pairing brilliantly with Mediterranean classics like couscous alla Trapanese, grilled seafood, or herb-infused roasted vegetables.
