German-born winemaker Bastian Wolber honed his craft under natural wine icons like Jean-François Ganevat and Jean-Yves Bizot before launching his own Burgundy project. For this Bourgogne Blanc, he works with organically and biodynamically farmed Chardonnay planted on limestone soils. The winemaking stays strictly low-intervention, using wild fermentations in seasoned oak and ageing the wine on its lees in large barrels to build texture without masking the fruit.
Vibrant, clean, and full of energy, it opens with crisp green apple and ripe white orchard fruit offset by subtle notes of salted honey. A stony mineral drive runs right through the palate, balancing natural body with a bright, refreshing tension that keeps you reaching for another glass. Serve it up alongside roasted sea bass, scallops, or shellfish tossed in a lemon-butter and herb sauce.
