Bastian Wolber sources the Pinot Noir for this bottling from two distinct Burgundian sites: old vines in the Mâconnais planted back in the 1970s and plots in Ladoix with vines up to 70 years old. The hand-harvested fruit undergoes whole-cluster, semi-carbonic maceration in a mix of wooden and stainless steel vats before spending 18 months maturing in seasoned barrels. Bottled without fining, filtration, or added sulphur, this is a far cry from your average regional red.
Juicy, energetic, and fruit-forward, the wine delivers a generous core of bright red berries alongside subtle earthy undertones and a fine mineral backbone. The whole-bunch ferment gives it an inviting bounce and freshness, while the old vines lend real depth and character on the finish. It is a brilliant, low-intervention red that drinks fantastically alongside roast pork, seared duck breast, or a spread of cured meats and soft cheeses.
