Didier Grappe is a low-intervention winemaker in the Jura region who strongly believes that disease-resistant hybrid grapes are the future of farming. Since he refuses to spray his vineyards with chemicals, even avoiding traditional copper and sulphur treatments, he champions the Seyve Villard hybrid grape, which thrives naturally without intervention. Grown on Jura's classic limestone and marl soils, the fruit is directly pressed to create a clean, precise white wine that carries all the electric tension and edge you would expect from the region.
In the glass, this wine offers a style similar to a crisp Chardonnay or Melon de Bourgogne, balancing a rounded, slightly buttery mouthfeel with stony minerality. It features bright flavours of green apple and preserved lemon, layered with aromatic herbs, subtle florals, and a touch of flinty smoke. With its mouthwatering acidity and energetic finish, it is a highly refreshing, low-intervention bottle that is incredibly easy to drink in one sitting.
