Grown high on the south-facing Schieferberg slopes, these vines thrive on pure schist rock that holds onto daytime heat and warms the fruit during chilly mountain nights. The Bohn family crafts this bone-dry Pinot Gris completely unfiltered and without any added sulphites or additives. The result is a broad-shouldered white loaded with fiery acidity and serious punch.

Expect a complex mix of stone fruit, citrus zest, and subtle apple skin bitterness, rounded out by touches of ginger spice, anise, and sandalwood. The finish is all crushed rock and mineral precision. Decant this one before serving to let it open up, then pair it with sushi, grilled fish, free-range poultry, or a hearty Munster cheese pie.
