Marc Soyard is the only winemaker allowed to use the "Côteaux de Dijon" designation, a right he earned after winning a city-led competition to manage this 160-hectare estate. Having refined his craft at the prestigious Domaine Bizot, Marc brings a minimal-intervention approach to these vineyards, farming with organic and biodynamic principles. This Chardonnay is fermented with natural yeasts and aged in a variety of barrels, where Marc often gets creative by experimenting with different woods like chestnut and acacia alongside traditional oak.
The 2023 vintage proves that Chardonnay can be just as successful as Pinot Noir on the outskirts of Dijon. This is a rich and compelling white that feels classic to Burgundy while offering a subtle nod to Marc’s roots in the Jura. It is a wine that truly benefits from a bit of air, so decanting it for about half an hour is well worth the effort. Once open, it reveals a concentrated profile of spiced apple, crushed ginger, and orange zest, all layered over a smoky, flinty minerality and a hint of sea salt.
