This Pinot Noir is a great example of Marc Soyard’s work at Domaine de la Cras, where he has the unique right to use the "Coteaux de Dijon" designation. The fruit comes from the "En Bessy" vineyard, where vines between 20 and 45 years old are farmed using organic and biodynamic methods. In the cellar, Marc uses a "sandwich" fermentation technique with a mix of whole-cluster and destemmed grapes, followed by about a year of ageing in neutral oak. As with his other wines, he keeps things natural by avoiding filtration and only adding a tiny amount of sulphur if necessary at bottling.
The 2023 vintage is remarkably expressive and aromatic, leaping out of the glass with scents of wild raspberry, strawberry, and cherry. Because of the whole-cluster use, you will also notice subtle notes of garden herbs, baking spices, and a hint of forest floor. On the palate, it is medium-bodied and elegant, offering a dense core of red fruit supported by fine, supple tannins and a distinct mineral edge. It is a sophisticated red that pairs beautifully with grilled meats or a spread of mature cheeses.
