Marc Soyard is the talent behind Domaine de la Cras, a unique estate owned by the city of Dijon. Originally from the Jura, Marc won a competition to run this property after honing his skills as the vineyard manager at the legendary Domaine Bizot. He follows a hands-off philosophy, using organic and biodynamic practices to let the land speak for itself. For this cuvée, the fruit undergoes a natural fermentation using 100% whole bunches in stainless steel, followed by 18 months of ageing in a mix of old and new barrels.
This 2023 Aligoté is a fantastic example of how Marc can elevate a modest grape to something truly premium. In the glass, it shows a lovely bronze-yellow hue and offers an aromatic mix of citrus zest, honeysuckle, and warm buttered toast with a hint of honey. On the palate, there is a fleshy ripeness and concentrated notes of tart apple and pear. It is all held together by a bright, mouthwatering acidity that makes the wine feel incredibly balanced. It is drinking beautifully now, but will continue to develop well over the next four years.
