Domaine de la Touraize takes an ultra-clean approach to this Arbois Chardonnay, ploughing the vineyard soils and skipping chemical weedkillers entirely. Whole grape bunches are pressed and fermented naturally with wild yeasts in 350-litre oak barrels. To keep the wine fresh rather than oxidative, the barrels are topped up weekly during a twelve-month stay on fine lees, then lightly filtered and finished with minimal added sulphur.

The outcome is a lively Jura white that pairs rich yellow orchard fruit with a crisp, driving limestone acidity. Aromas of green apple, lemon curd, and a hint of smoky reduction give way to a buttery, well-textured palate that lingers with a long, savoury finish. It is a fantastic match for starters, shellfish, or white meats.
