Sourced from the legendary Les Corvées plot in Arbois, famous for its gravel and marl soils, this Trousseau is farmed meticulously without chemical intervention. Domaine de la Touraize destems the hand-picked fruit and gives it a gentle 30-day skin maceration, relying on native yeasts and avoiding heavy punch-downs to keep the tannins supple. Half the juice ages in large 600-litre wooden barrels for nine months while the rest rests in tank, achieving a brilliant balance between structure and pure fruit.

Give it a moment to breathe in the glass, and initial hints of reduction quickly give way to a fragrant mix of wild red berries, black pepper, and warm spice. On the palate, it delivers a smooth attack with nicely integrated tannins, fantastic aromatic depth, and a long, balanced finish. Serve it slightly cool at 13°C to 15°C with duck breast, a seared tuna steak, or a classic beef steak in pepper sauce.
