Named after the rich blue marl soils of the Jura, this cuvée from Domaine de la Touraize is rooted in thoughtful vineyard work, using natural herbal sprays and regular ploughing rather than chemicals. Whole grape bunches are pressed and fermented with wild yeasts inside large oak casks, where the wine ages on its fine lees for 18 months. The barrels are topped up weekly to protect the juice from oxidation, resulting in a clean, floral expression that goes into the bottle unfiltered.
Those unique blue marl soils give the wine fantastic vitality and character, making it brilliant at the dinner table. Serve it slightly chilled between 10°C and 13°C alongside sautéed scallops, smoked salmon, or grilled fish. It also works brilliantly with sweet and sour dishes, fresh asparagus, or a generous wedge of Comté cheese.
