Erythrite is a new cuvée made from pure Mondeuse following Brice's takeover of vines from the Louis Magnin estate. Half the grapes go in as whole bunches, fermented with indigenous yeasts and given gentle extraction before 18 months of maturation in aged oak barrels ranging from 2-10 years old. The result is supple and full-bodied with light tannins and a vegetal touch that hints at those whole stems. On the nose, it's reminiscent of a beautiful northern Rhône Syrah with notes of pepper and violet alongside delicate black fruits like blackcurrant and blackberry. The palate shows beautiful concentration with present but very fine tannins that carry everything in perfect balance. Bottled with minimal sulphur, it's a wine that pairs brilliantly with charcuterie, roast chicken, pork, or a charcoaled rib eye – showing how expressive Mondeuse can be when given this level of care.
