This distinct Jura skin contact wine is a blend of 80% Savagnin and 20% Chardonnay sourced from old vines. The fruit undergoes a maceration period of up to twenty-one days in whole bunches, a technique that extracts a unique depth of flavour and structure. Following the maceration, the wine is aged for twenty-two months, beginning in amphorae before moving into large wooden foudres. This lengthy maturation process allows the different components to coalesce, resulting in a wine of exceptional character that reflects Pauline and Géraud Fromont’s commitment to patient, traditional winemaking.
The 2023 vintage is an intense and aromatic experience, opening with notes of dried fruits, candied citrus, and floral accents. On the palate, the wine displays a textured and almost tannic substance that is perfectly balanced by a streak of mineral freshness. While there may be some tension upon opening, this is a bottle that truly benefits from air and patience to reveal its beauty. The finish is long and vibrant, highlighting the unique "porous plushness" and spicy energy that make this one of the most compelling maceration wines in the region.
