En Billat is a lifted, lovely, and rare zero-zero Jura red from one of the region's most highly allocated and deeply respected producers. Labet's Poulsard comes from 33-126-year-old vines grown on clay and schist soils, hand-picked and destemmed before 15 days of maceration to extract texture and aromatics, then aged for five months in barrel. This is iconographic stuff – a beautiful mix of fresh and ripe raspberries, strawberries, and cranberries with an extremely light and elegant nose. The palate continues that theme with lovely floral notes and lively acidity, discovering sun-warmed wild strawberries, fruit flowers and peonies, raspberry leaf, wet logs, and salt-sprinkled beetroot with hairline fracture-like tannins that are perfectly integrated. It's the kind of wine that rewards contemplation whilst being dangerously easy to drink – best enjoyed in one sitting with the most luxurious BLT of your life or simply on its own to appreciate Poulsard's ethereal charm.
