M comes from Pinot Gris grown in the Dionysiuskapelle lieu-dit, where a Roman chapel once stood, and gets a proper five-week maceration on the skins before being pressed into demi-muids and 500-litre barrels for ageing. This terroir-driven orange wine drinks more like a light red with rustic, fresh tannins and crunchy, spiced fruit. The nose is full of subtle smoke and cooked red fruit, whilst the palate shows pleasant tannins and a very fresh character with hints of pepper and toast running through. It's dangerously drinkable stuff that pairs elegantly with cheese and creamy, spicy dishes – the kind of wine that shows what Pinot Gris can do when you let it hang out on the skins for a while. Bruno and Théo's Fukuoka-inspired approach really shines through here, creating something with real personality and texture that's miles away from typical Alsatian Pinot Gris.
