Domaine de Montbourgeau has been a cornerstone of traditional Jura winemaking since the 1920s, with winemaker Nicole Deriaux carrying on her grandfather's legacy in the star-shaped village of L’Étoile. Made in the traditional method using her youngest Chardonnay vines, this sparkler comes entirely from a single vintage despite carrying a non-vintage label. The juice ferments in stainless steel before spending two years in small barrels and demi-muids, followed by several months assembling in tank and 18 to 24 months resting on the lees with zero added sugar.
The result is a sizzling, bone-dry cremant with mouthwatering drive and real precision. Bright notes of green apple, lime zest, and white peach are grounded by a chalky mineral core and a touch of semi-oxidative complexity from the extended lees contact. Linear, racy, and packed with energy, it makes a brilliant aperitif to kick off an evening.
