Nicole Deriaux runs Domaine de Montbourgeau across just nine hectares in the tiny Jura sub-region of L’Étoile, crafting organic whites packed with personality. This dry, complex bottle of Chardonnay is aged sous voile, maturing under a natural yeast veil in barrel that allows for a slow, gentle oxidation. It is a traditional low-intervention technique that draws out immense depth and mineral punch from the local soils.

Decidedly tangy and bold, the wine opens with aromas of golden raisin, vanilla blossom, and toasted hazelnut. The palate pairs crisp apple and citrus rind with a rich texture, leading into a finish of mineral notes and hazelnut skin. Pour it lightly chilled next to fatty or oily dishes to balance the bright acidity, or pair it with tangy foods to bring out its fruity side.
