La Bulle is the estate’s playful take on sparkling wine, crafted using the ancestral method. This Pét-Nat is a unique blend of 75% Sauvignon Blanc and 25% Chardonnay, bringing a zesty and refreshing twist to the Beaujolais region. As part of Raphaël Saint-Cyr’s commitment to natural winemaking, the fruit is grown on his certified organic estate in Anse, where he has pioneered large-scale sustainable farming.

The wine is fermented using natural yeasts and spends a generous 18 months resting on its lees, which develops a lovely depth and creamy texture behind the bubbles. Because it is bottled while the initial fermentation is still finishing, the sparkle is soft and natural. It is a vibrant, hazy, and joyfully low-intervention fizz that works just as well for a celebratory toast as it does for a relaxed weekend brunch.
