Melo is a rare and experimental treat from Raphaël Saint-Cyr, the fourth-generation winemaker who turned his family estate into the largest organic domaine in Beaujolais. This wine is a clever blend of three different grape varieties, layered together in the tank like a mille-feuille pastry. It is a true small-batch production, with only 3,000 bottles ever made.
The grapes undergo a cold carbonic maceration for 15 days, with the fermentation kicking off naturally using indigenous yeasts. Raphaël uses a traditional vertical wooden press to gently extract the juice before ageing the wine in a combination of old barrels and concrete tanks. Bottled unfiltered with minimal added sulphur, it is a complex and layered red that perfectly showcases Raphaël's meticulous approach to low-intervention winemaking.
