Sauvage Blanc is a true outlier in the land of Gamay. This unique Sauvignon Blanc is grown on 15-year-old vines in the deep clay and limestone soils of the Pierres Dorées. Raphaël Saint-Cyr has created a white wine that steps completely off the beaten path, produced in tiny quantities with only 2,000 bottles made.
The winemaking process is slow and steady. After a direct press, the juice ferments in neutral oak barrels using only indigenous yeasts. The wine then spends a full two years resting on its lees in those same barrels, undergoing a natural malolactic fermentation that adds incredible volume and texture. Bottled unfined, unfiltered, and with no added sulphur, it offers a powerful nose of dried fruits and spices. It is a precise, mineral-driven white with a saline finish that makes it a fantastic partner for seafood or a well-curated cheese board.
