Ponzichter is made from grapes grown on both Austrian and Hungarian soils. It is a crazy red that is light in colour, extremely drinkable, and ideal for a weeknight treat. It has a fresh, herbal flavour with notes of cherry and rosemary, nice tannins, and a rustic character.
Ponzichter referred to the Sopron region's German-speaking winegrower minority. The Hungarians called the German winegrowers this because they grew vegetables, primarily beans, between the rows of vines. This piqued Franz's interest because it is unique from a biodynamic standpoint. It provided farmers with something to eat even in bad vintages, aiding nitrogen assimilation from the air into the soil.
