The latest iteration of Pauline and Carl's Fizzy feels more complex and grown-up than ever before – this sparkling blend has really found its stride. The winemaking combines different approaches with some fruit pressed directly and some macerated, then everything ages on the lees before disgorgement in March 2025. What you get is a delicious medley that hits all the right notes: fleshy fruit balanced with tonic bitters, toasty lees character, and that quenching salinity that makes each sip as moreish as the last. It's lighter and more focused than previous vintages whilst maintaining real depth – the kind of sparkling that manages to be both serious and joyful, perfect for any occasion that calls for bubbles with character.
