Weiss is a clever blend where different varieties get different treatments – Bacchus and Müller-Thurgau are macerated overnight for extra texture, while Riesling and Weissburgunder are direct-pressed to keep things fresh. Everything ferments separately in a mix of stainless steel and oak before being blended, creating a wine that's more than the sum of its parts. Lovely tropical notes dance across the palate, carried by waves of zippy acidity that keep everything bright and lively. There's a very subtle grip on the finish that adds just enough structure without weighing things down – it's the kind of wine that keeps you going back for more, perfectly capturing that anticipation-of-spring feeling in a glass.
