This is perhaps Henri Chauvet's most direct and pure expression of volcanic Gamay. Grown on the slopes of Boudes on ancient basalt and blue marl soils, these old vines produce an unapologetically fresh wine. It is fermented with whole bunches and aged mostly in stainless steel to keep the fruit as bright as possible, with no filtration and almost no added sulphites.
In the glass, it is a vibrant ruby colour with a nose of crushed raspberries, fresh cherries and a hint of wild herbs. Because of those volcanic soils, you get a lovely stony minerality and a subtle smoky finish. It is juicy and supple, making it a great match for charcuterie, hard cheeses or even a classic roast chicken. Serve it slightly chilled to really let that acidity sing.
