Côtillon des Dames brings together fruit from two distinct plots – one in Albertville on mica-schiste soils, the other in Fréterive on limestone scree – for a wine that's all about texture and structure. The whole bunches get up to two months of maceration with regular punch downs for proper extraction, then spend a year ageing in 300L barrels. What emerges is a wine with real presence: angular tannins that gradually give way to soft, bruised fruit flavours and a beautifully rounded finish. It's got that mountain backbone but wears it elegantly, showing how extended maceration can build complexity without losing finesse.
