Jean-Yves Péron sources these Favorita grapes, also known as Vermentino, from organic vineyards in the rolling hills of Piedmont, Italy. The fruit is grown on sandy clay soils before being brought back to his cellar in Savoie. After a two-week maceration, the wine is aged in 300L barrels for four months on its lees and bottled without any filtration or added sulphur.

The result is a bright and refreshing white that tastes like tropical mango and papaya mixed with a delicate, herbal freshness. It has a subtle, pithy grip on the finish that gives it great structure. It is as pure and clean as Alpine spring water, making it a fantastic pick as the weather warms up.
