Rosé de Meunier is Aurélien's masterful expression of the Pinot Meunier that thrives around Chavot, crafted from 30-year-old vines farmed with respect for nature and ecological methods. This is 100% Meunier, featuring a clever blend of three unique winemaking styles: 30% saignée-style maceration for body and freshness, 10% red wine for complexity and power, and 60% white wine (including 40% barrel-aged reserve wines) for crisp, fresh fruit. Picked by hand at full ripeness, the wine undergoes alcoholic fermentation in vats, foudres, and barrels with partial malolactic fermentation, then ages on fine lees before hand-disgorgement with a dosage of just 2.5g/l. The result is dazzling, rich yet focused with superb depth and a texture that's creamy and plump. Orange peel, sweet red berry fruit, cranberry, mint, and chalk develop as this breathtaking Champagne shows off its pedigree.
