La Cabane comes from Pinot Noir vines planted in 1983 in Fontenay, adjacent to the Les Boutonniers vineyard where Céline and Steve have been planting more vines recently. The vines are rooted in blue marl and limestone soils with streaks of dolomite – warmer argilo-calcaire compared to marlstone. The grapes are destemmed with a three-week maceration before being aged nearly a year on their lees in Meursault barrels. This is classic Jura-style Pinot – bright and crunchy with a magnificent cherry colour and an intense nose of blackberries and wild bramble. The palate is silky and elegant with noble herbal flavours alongside bramble fruit, fine fresh powdery tannins, and that refreshing rustic character. The finish remains slightly reserved but evolves beautifully, developing earthy notes over time. This showcases what Pinot can be in the Jura when given the full treatment.
