Les Boutonniers comes from Chardonnay vines planted in the 1960s in Fontenay, rooted in blue marl, limestone scree, and streaks of dolomite. The wine is aged nearly a year on its lees in Meursault barrels with no fining or filtration and minimal sulphur at bottling – Céline and Steve's commitment to minimal intervention shines through. The 2023 vintage shows bright pear, crisp apple, and citrus layered with smoky flinty minerality and a touch of reduction on the nose. Subtle tropical notes emerge as it opens, revealing a structure and finesse that promise excellent ageing potential. Since 2017, they've opted for the Vin de France designation rather than battle with INAO administration, allowing them to focus on what matters – farming their 5.5 hectares across ten plots with care and bottling wines that speak clearly of the dolomitic limestone that defines their corner of the Jura.
