Prémice is 100% Savagnin made from handpicked grapes sourced from different parcels with both younger and older vines – half are 60 years old, whilst the other half were planted in 2003 and 2012. The wine comes from parcels like "Les Combes," where the vines are rooted in red marl from the Upper Triassic Keuper formation, with limestone scree and bands of dolomite at the surface. Wild fermented and aged for a year in neutral barrels in the "ouillé" style (topped up to prevent oxidation), this showcases terroir-driven Savagnin at its finest. On the nose, expect fresh lime and pineapple layered with dried fruit, caramelised nuts, and a hint of smoke. The palate opens with unexpected richness, density and breadth driven by vibrant energy, alongside zingy citrus and a pleasing butteriness. The finish is still tight – patience will be rewarded as this develops further complexity with time.
