Maïté and Warren Perrocheau are crafting something special in Anjou with ‘Quand Fond la Neige’, a cracking example of Chenin Blanc at its absolute purest. Sourced from organic vines aged between 45 and 70 years old on flinty schist and slate soils, this wine really captures the essence of its terroir. It is made with a strictly low-intervention approach: the grapes are direct pressed and spend a year resting in old Burgundy barrels before being bottled without any fining, filtration, or added sulphur.
The result is a top-notch gastronomic wine that balances freshness with a lovely texture. You can expect aromas of green apple, pear, and citrus, leading into a palate that is round yet driven by a strong mineral backbone. The finish is long and salty, making it perfect for a good meal. It is an elegant choice for poultry, grilled fish, or fresh cheeses, but with only 2,000 bottles produced, it is a rare find.
