This low-intervention skin-contact wine is made from organically grown Pinot Gris, locally known as Ruländer. The grapes are harvested by hand, de-stemmed, and crushed before undergoing a five-day maceration on the skins in stainless steel tanks, where they ferment spontaneously with indigenous yeasts. After a very gentle pressing, the wine goes back into the steel tanks to age for 11 months before being bottled completely unfined, unfiltered, and with no added sulphur.
In the glass, the tea-like maceration gives the wine a beautiful sunset-crush, pinkish-orange colour. The nose offers a delicate mix of white flowers, pink grapefruit, lemon, and subtle spice. On the palate, it balances a rich "peaches and cream" quality with vibrant notes of lychee and apricot, all supported by an earthy, mineral depth. With its finely extracted, grippy tannins and a textured finish, this clean and elegant wine pairs beautifully with white fish and other subtle dishes.
