Crafted by Martin Hirsch, this vibrant, low-intervention Pet Nat is made from a blend of Dornfelder and Domina grapes. Following a slow press over a few hours to keep the profile juicy and fruit-driven, the remaining juice is bottled directly to finish its spontaneous fermentation. Coming from the cooler 2024 vintage, the wine was disgorged in the spring of 2025 to remove the lees. It is bottled completely unfiltered with zero added sulphites, clocking in at a highly refreshing 10.5% ABV.
Pouring a vivid cherry red, the colour comes naturally from the deeply pigmented juice. On the palate, it delivers lively, fine bubbles and a blast of tart red fruits like blueberry, cocktail cherry, and redcurrant, accented by a distinct herbal hint of hibiscus. The acidity is bright and crunchy, reminiscent of a crisp red apple, creating a pleasing sweet-and-sour dynamic with just a tiny touch of grip. It is a highly drinkable, more-ish wine that goes down effortlessly, making it the perfect pour for a warm summer evening.
