This is Martin's first go at a pure Pinot Noir, no Pinot Gris in the mix this year, and blimey, has he nailed it. This Pinot has a lovely floating quality that somehow manages to be both earthy and elegant at the same time. You'll get hints of cherry and spice upfront, but then these brilliant smoky, almost eucalyptus notes start creeping in that make it properly interesting. 2/3s of the grapes undergo whole-bunch fermentation, giving it a bit of grip and rustic charm, whilst the rest of the destemmed grapes keep things silky smooth. It's got that natural wine character without being too funky – just enough reduction and tartness to keep you on your toes. Perfect with something hearty like potato rösti and smoked trout, but honestly, it's delicious enough to drink on its own.
