Meaning "together" in Slovak, Spolu is Naboso’s playful co-fermentation that completely blurs the line between a light red and a skin-contact rosé. For the 2023 vintage, whole bunches of red Blaufränkisch and Pinot Noir are steeped directly in the fresh, direct-pressed juice of white Grüner Veltliner. This setup undergoes a seven-day semi-carbonic maceration before pressing, followed by twelve months of ageing on fine lees in neutral oak barrels, where it completes malolactic fermentation.
It pours a brilliant glowing pink-ruby and bursts with juicy dark berries, white pepper, and a subtle zesty streak from the Grüner base. The whole-bunch maceration gives it a fun, crunchy texture and a playful bounce, while the oak ageing lends just enough structure to keep it grounded. Serve it with a light chill alongside charcuterie, wood-fired pizza, or grilled vegetables for an incredibly versatile, easy-drinking red-white hybrid.
