Thomas Pico's Chablis comes from 17 parcels representing just under 17 hectares around Courgis, southwest of Chablis, with vines averaging 35-40 years old (some reaching 70) planted from massal selections on classic Kimmeridgian soils. Full qualitative harvests yield an average of 30-40hl/ha, then the wine spends two to three winters on fine lees across a variety of vessels – concrete eggs and vats, barrels, foudres, and stainless steel. This creates serious complexity whilst maintaining razor-sharp purity that's quintessentially Chablis in character. The nose shows ripe grapefruit and wild herbs, whilst the palate delivers mouthwatering, zesty grapefruit alongside saline minerality and apricot fruit with texture from the concrete ageing. There's real finesse on show here with an incredibly clean, long finish – this is Chablis for those who "don't like Chardonnay" but appreciate what limestone can do to this variety. Pattes Loup's flagship wine consistently shows remarkable drinkability, vitality, and depth.
