This lovely golden Chasselas from Pierre Frick is a proper head-scratcher in the best possible way. On the nose, you'll get intriguing sherry-like notes mixed with fermenting apples  – it's almost like walking past an old cider barn in autumn. But then you taste it and boom – there's this brilliant, zesty acidity that keeps everything lively and fresh. It's the kind of wine that makes you do a double-take because what you're smelling and what you're tasting seem to be having completely different conversations. The no-sulphur approach gives it real character without being funky for the sake of it, and the acidity makes it incredibly moreish. Perfect for those moments when you want something that'll keep you guessing whilst being utterly delicious at the same time.
