A Change of Heart is 100% Kékfrankos (Blaufränkisch) from the Mátra region's volcanic loam soils, and it showcases why Annamária Réka Koncz has quickly developed a dedicated following among natural wine fans worldwide. Working on volcanic soils midway between Eger and Tokaj, she embraces regional grapes but puts her own unique spin on things. This wine is split 50/50 between two approaches: half gets a gentle crushing with bunches layered like a sandwich in 1000-litre harvest vats, covered and untouched for 10-12 days for simple carbonic maceration with naturally produced CO2, then pressed in a traditional basket press. The other half is destemmed and direct-pressed with no maceration. The result is a medium-bodied red with an ideal balance of initial juiciness and meditative earthy texture. Unfined, unfiltered, and made with minimal SO2 using native yeasts – this is biodynamic winemaking on volcanic soils that creates something both approachable and thought-provoking.
