Zsolt Sütö sources Chardonnay from hand-tended, chemical-free vines in Slovakia’s Nitra region, rooted in clay-loam and calcareous limestone soils. In the cellar, whole grape bunches are direct-pressed straight into new 600-litre Zemplén oak barrels to ferment naturally with native yeasts. After eight months resting on its fine lees in wood, it is gravity-bottled unfined, unfiltered, and with zero added sulphur.
The local new oak and lees time lend a smooth, creamy texture filled with yellow pear, ripe apple, and a gentle touch of spice, all balanced by a clean mineral streak and bright acidity. It hits a level of elegance and balance that will easily appeal to fans of classic white Burgundy. Serve it slightly chilled alongside roast chicken, creamy pasta, or seared pork chops.
