Syfany is an experimental Czech winery that takes local sourcing to the next level, even using nearby acacia wood to craft the barrels for this wine. It features André, a fascinating local grape variety that is a cross between Saint-Laurent and Blaufränkisch. After fermenting with wild yeasts, the wine spends a full year resting in those unique acacia barrels, developing plenty of character before being bottled with minimal sulphur.
The result is a brilliantly easy-drinking red from the Blue Mountains that still packs plenty of personality. You will find a mix of fresh blackcurrants and blueberries alongside richer hints of dried cranberry, prune, and a kick of black pepper spice. It is full-bodied and lively in the glass, with high acidity, enveloping tannins, and a savoury cherry finish.
